Origin of the grape

The "Las Tablas" estate was planted in 1976,in slopes, over granite soils, facing the Atlantic Ocean and protected from the north winds, at an altitude of 70 meters above sea level , in the northernmost area of the Rías Baixas, away from other vineyards that can transmit disease. Planted in pergola, with 2 vines per post in competition to regulate naturally, with a great separation between posts and wide corridors to facilitate ventilation with the entry of the Atlantic wind, our main ally.These elements differentiate it and make it unique..

Vintage

Sustainable farming is practised. No herbicides, insecticides or aggresive products are used. Everything is done by hand.
Pruning took place at the beginnig of February. After the flowering in June, surplus shoots were trimmed. Throughout the summer, the crops were thinned and excessive individual branches were cut. During the ripening period a detailed analysis kept a close eye on acidity and sugar levels in the grapes.
The grape is selected bunch to bunch. Only 10% of the grape produced in the plot is dedicated for the vinification of this wine, usually from the highest area, where the roots are in greater contact with the mother rock. It is usually the last parcel of the winery to be harvested.

Elaboration

Low temperature maceration. Only the flower must is selected,static racking . Alcoholic fermentation, with native yeast at 16-18 C.
Aged in French oak for 6 months, with its fine lees and subsequent ageing of 12 months in stainless steel tank with the fine lees; Both with Battonage. In bottle rack stays the appropriate time for its release to the market. Wine elaborated to evolve many years in the bottle.

Tasting notes when released

Straw yellow, with intense greenish hue, limpid and bright. Nose of medium-high intensity, of great complexity. White flowers, mimosas, balsamics, fresh fruits (white,bone and citrus), candied and syrup fruits,spices, with the presence of fine lees, notes of pastry, minerals, marinades and fine smoked nuances.
Intense mouth, vibrant and fresh acidity, mineral, saline, fruity, feeling fat and creamy, long and persistent also in the aftertaste.

Recommendations

Storage temperature should not exceed 18 º C or 20ºC and should never be exposed to the sun, avoiding sudden changes of temperature. Perfect with hors d'oeuvres, seafood, fish, rice, white and red meats and Oriental cuisine. It should be consumed at a recommended temperature between 10 and 12 º C.
